Chilterns Catering and Events will be opening the cafe first, with The Baker & The Coffee Maker holding its grand opening on Monday.
Next on the list will be the bistro, with Albert's releasing their a la carte menu and opening up for diners in the coming two weeks.
Chilterns manager Ryan Fox said they were hoping to finish the sports bar and high tea terrace by spring, provided their plans were not delayed by further coronavirus lockdowns.
Wagga Sports Hub will be a traditional sports bar serving the usual drinks and snacks, while the outdoor terrace will serve high tea overlooking the bowling greens.
"I'd like to see barefoot bowls, pop-up picnics on the bowling greens over the summer, and really look at different events and community engagement," Mr Fox said.
"We're incredibly excited about Wagga RSL, and I think everyone all the way through is excited about the prospect of working together."
In other news:
Incoming head chef Matt Halford said he was keen to carry on the legacy of the former caterers Mathew and Lauren Oakes, who were well-liked by the RSL's customers.
"We've got big shoes to fill, but we've got big plans for this place so I'm looking forward to executing those, getting open, and really getting involved," Mr Halford said.
He will be rolling out a brand new menu that places an emphasis on local produce sourced from around the Riverina, however Mr Halford said his most signature dishes were the old pub grub classics.
"Our parmis, for sure," Mr Halford said.
