Sisters Haley Tait and Leisa Pearce who run the markets are using their message of clean living to encourage the city to donate.
Ms Tait said there would be a range of options on offer for people to donate through.
"We will have Karma Fitness which is where people can pay what they want or what they can afford for an exercise class and the proceeds are donated to charity, in this case to NSW RFS," she said.
"This will involve boxercise and yoga each for 45 minute sessions starting at 8am."

Attendees will also have the option to cash in their cans and bottles for a 10 cent refund which will be donated on to the NSW RFS, as well as a community barbecue on offer to help raise funds.
"Anything we can donate is a bonus, it all helps so we are open minded about what the end result will be but it is all appreciated," Ms Tait said.
The market will be on Saturday, January 18 and will be the sisters' third market since starting up in November.
