For the past 40 years Peter and Vicki O'Brien have woken up before dawn most mornings to prepare and serve up countless pies, sausage rolls and sandwiches.
This dedication paid off with O'Briens Wagga Hot Bake Bakery now a Wagga icon attracting more than 2500 customers every week to their Morgan Street store.
The couple are now preparing for semi-retirement and leaving the store in the hands of the next generation.
"Our children are taking up the mantle," Peter said.
"Our son Tim as head baker, our daughter Crystal with her front-of-house skills and great staff like Janette Skinner, Barb Prasana and many more.
"Tim has won many medals in the Great Australian Pie Competition especially with his famous pepper pie."
With the future of the business in capable hands, Peter and Vicki have been reflecting on their time in business.
"We love Wagga and it's been a privilege to be part of the community for the past four decades," Peter said.
"We've seen so many young people get a start here and had so many apprentices go through. We've loved being involved with charity work including food hampers and weekly donations.
"For the past 15 years we've also been involved with and partnered the Calvary Drug and Rehab Centre helping people with addiction get their lives back on track."
This support for the community wouldn't have been possible without the store's loyal customers.
"We have so many faithful helpers and customers we want to thank including Peter and Juliet Mathias, Trevor and Mararget Poulson, Jack Whyte, Barry McClaen, Paul Greer, Lynsay Vidler, Rodney Kendall (long-time employee), Dan Grentell, John Anderson and many more, too many to mention, who have helped make Hot Bake an icon," Peter said.
"We'd also like to thank all our farmers who come in for a sanga, pie and cup of tea."
While today the store is iconic, it all began with plenty of hard work and a family commitment.
"Myself, Vicki, my brother Mark and his wife Barbara - along with our parents Dan and Pat started in July 1979 with virtually just the clothes on our backs," Peter said.
While Mark and Barbra left the business 15 years ago they continue to help out and show their support for Peter and Vicki.
"By the grace of God and with so much family involvement we made it and now it's 40 years later," Peter said.
"Trevor and Brenda Whybro and Dave and Bronwyn Wallace also pitched in and helped get us started and they have always been there for us."
However, for Peter the best support comes from his wife Vicki who he considers to be his "greatest asset."
"She's the hardest working person I've ever known. She's always calm when it's stressful and has a heart for people."
