The dinner is held yearly in honour of former NSW Labor Member for Wagga Eddie Graham, who served from 1941-1957.
Event organiser, and Wagga councillor, Dan Hayes said he hoped to have a sell-out crowd at the Okami restaurant on August 12 if COVID-19 restrictions permitted at the time.
"We usually ask the guest speaker to talk about current issues," he said.
"They usually speak about something they are very passionate about ... every speaker over the years has brought their own flavour to it."
Cr Hayes said he imagined Ms Plibersek would have a lot to talk about given the recent and long standing gender issues raised in federal politics.
"Tanya has been a very strong voice for women in that portfolio but also for education and the financial impact COVID has had on the university sector, which is extremely important to Wagga," Cr Hayes said.
The event will also serve as a fundraiser for the Labor for Wagga Council campaign.
