Plans have been lodged to turn the old, empty Knights Meats building on Fitzmaurice Street into a new cafe featuring a large outdoor dining area.

One of the cafe's owners told The Daily Advertiser that it was still early days, but that they were hoping to have the cafe up and running sometime in late July.
The development application was lodged by Jamie Shepley, a well-known chef who has worked at The Oakroom, the Roundabout, and other high-end restaurants around Wagga.

The application shows plans for a 30-seat cafe, with a further 20 seats outside on the west side of the building in an alfresco-style outdoor dining area.
The outdoor area will feature a garden with herbs, citrus, and indigenous plants, as well as a small serving window for coffee.
The inside of the building will be undergoing some refurbishments, however the outside of the building will remain mostly untouched save for the addition of signage.
The cafe's opening hours will be 7am to 3.30pm on Monday through to Sunday, as well as 5pm to 11pm on Friday and Saturday. The cafe will have a liquor licence.
The building used to be home to the iconic Knights Meat butchery, which closed in 2019 after a long period of economic hardship.
The previous owners had reported an unprecedented drop in customers as well as two cases of employee theft incidents totalling hundreds of thousands of dollars.
The butchery had been part of the Wagga cityscape for 45 years, and the building itself has been there since 1948.
