Mooney shattered the records in all seven individual open boys' races, and was also part of the Webber house relay team which did likewise in the 4x50m relay.
Chloe Donelan eclipsed the 15 years girls 50m backstroke record which had stood since 2008, as well as the 200m IM, while Annabella Storer set records in the open girls 100m freestyle and 50m butterfly.
Fifteen years boys age champion Oscar Gianniotis (50m breaststroke) and Natalia Horsley (50m butterfly) were the other record breakers on the day.
"We've had swimmers where you think their records will hold up, but Jamie's may stand for a while," sports coordinator Nathan Irvine said.
It was also the first time the school held the carnival as a competitors only event, with no spectators or students not racing.
Sherrin claimed overall house honours with 926 points, ahead of Webber (731), to reverse last year's result.
