WAGGA pubs are fighting it out in the kitchen to be crowned home of the city's best chicken schnitzel.

The chance to claim the prestigious title arose after a trio from Melbourne decided to head west as part of their 'Schnitty Committee Podcast'.
The Daily Advertiser spoke with a few Wagga pubs to let them pitch their case for what makes their schnitty the pick of the bunch.
For Kooringal Hotel's Head Chef Ryan Dedini, the secret was in simplicity.
"You have to go back to basics with a schnitzel," he said.
"When they first came about in pubs, they were served simply with chips and a plain gravy."
But simplicity did not mean blandness, according to Mr Dedini.
"A good quality oil will go a long way for both the chips and the schnitzel, allowing them to go a beautiful golden brown," he said.
"For the crumb, you want a nice, plain mix between a bread and a pancake crumb, because with any protein like chicken, you want to get the maximum flavour out of that.
The final touch was a light seasoning and rich gravy, all made in-house at the Kooringal Hotel.
"To top it off, our 300g schnitzels are just $12 Monday to Friday at lunchtime, and again every Monday and Tuesday night," Mr Dedini said.
While the head chef is adamant they are home to the city's best schnitzel, Turvey Park Hotel's licensee Mark Hogan says they're offering some tough competition.
"It's all about quality and presentation; I've been in pubs for 10 years and had my fair share of schnitzels," he said.
Mr Hogan said the key to the perfect chicken schnitty was where they source the meat.
"We use Lake Street Butchers, so it's all local produce which is fantastic, and our new chefs in the kitchen are really excited to show off their talents," he said.
The Red Steer Hotel's licensee Ben Stratton was also quietly confident in taking out the title.
"It comes down to the detail like fresh oil, and the technique," he said.
"We do a slow fry of the schnitzel followed by a flash fry to really crisp it up, because you want a juicy, steamy inside but a really crisp outside."

Mr Stratton did not waylay the competition, though, and said the winner could be anyone.
"We have a lot of great schnitzels from great pubs around Wagga, so at the end of the day, it could just come down to personal preference," he said.
"Or, it may just be that we do, in fact, have the best chicken schnitzel in Wagga."
The public can vote for their favourite online, with the top two announced on Friday, October 8. From there, the crew at the Schnitty Committee Podcast will put the winners to the test to decide the ultimate champions of Wagga's best chicken schnitzel.
