The truck had been carrying a two-level trailer full of cattle at the time of the crash, and when it rolled over the cows on the top level were able to escape but the cows on the bottom level found themselves pinned.
Cootamundra's Fire and Rescue NSW team managed to hack open the back door and rescue the cows, all of whom were still alive, albeit rattled by the experience.
Cootamundra FRNSW captain Les Carr said the cows otherwise appeared to be in good condition.
"They were only in there for a couple of hours," Captain Carr said.
A NSW Ambulance spokesman said the driver of the truck received "severe" cuts to his face, but was treated on scene by NSW Ambulance before being airlifted to Canberra Hospital.
"[Paramedics] treated one patient on scene, who had suffered from extensive facial injuries," he said.
NSW Police are currently on site and controlling traffic along Berthong Road and Burley Griffin Way, both of which are affected.
