When completed, the Holiday Inn and Suites will be the city's biggest hotel - boasting six storeys and 148 rooms.
Several large scale developments had been put on hold while the coronavirus pandemic continues, however Interlink Group project manager James Maher insisted the Mill development was continuing smoothly.
"Construction has commenced," Mr Maher said.
"All is going well with the project."
Mr Maher was not able to provide an estimated completion date. However, initial estimates put the date in early 2021.
Once the $37 million hotel is finished it will feature an indoor restaurant, bar, piazza, conference rooms, and enough event space to hold 300 guests.
The Holiday Inn is the largest of three hotel developments in the pipeline for Wagga, with a 100-room hotel earmarked for the corner of Baylis and Edward streets and another hotel set for Forsyth Street.
