Winners of the past five open division titles, Mater Dei will get their campaign underway against a team tipped to be one of their main challengers in The Riverina Anglican College (TRAC).
Mater Dei beat Kildare 27-24 in last year's decider, with both grand finalists in the same pool as TRAC.
"Definitely (Mater Dei will be favourites), but TRAC should be strong as well," competition convenor Kelly Lawson said.
"We're doing all the finals in the new stadium this year, and the preliminary games are all outside.
"They're playing in honour of a player who epitomised what school sport is about."
In today's other open division matches, Wagga Wagga High School plays Kildare High School and Wagga Wagga Christian College takes on Mount Austin High School.
