Helen Robinson, member of the Euberta Country Women’s Association branch described the recipe for the chocolate cake as a “quick-mix” cake.
“My mum taught me how to cook,” she said.
“Pikelets were probably the first thing I learnt how to cook because we used to cater for shearers when I was little.
“I progressed from there to doing things like scones and chocolate cakes.”
Mrs Robinson’s mother and aunties were into show cooking as well, a path which she followed.
“I also pass on cooking lessons to my grandchildren as well,” she said.
“They love doing things like chocolate biscuits.”
Chocolate Cake Recipe
Ingredients:
- 125 grams butter
- 1 ¾ cups self raising flour
- 1 ¼ cups castor sugar
- 2 eggs
- 1 cup of milk
- 2 tablespoons of cocoa
Method:
- Place all ingredients into a bowl and beat well until the ingredients are combined and the mixtures takes on a glossy chocolate look (a processor can be used if desired).
- Grease and line a 20cm tin (round or square).
- Pour the mixture into tin and bang the tin to even out the mixture.
- Cook in a moderate oven for about an hour.
- When cool, ice top with chocolate icing.
PRO TIP: If when touched in the centre, the cakes comes away from the side of the tin it is ready.
