Emergency services were called to the accident on Muttama Road, about 4km from the Hume Highway, shortly before 3pm.
Crews reportedly arrived to find one person trapped in each vehicle and fuel leaking onto the road.
An Ambulance NSW spokesman said the dead man was the driver of one of the vehicles.
His passenger managed to free himself and escaped with only minor injuries.
He was taken to Cootamundra Hospital in a stable condition.
The driver of the second vehicle was treated for multiple fractures and facial injuries before being rushed to Wagga Base Hospital in a serious but stable condition.
The Snowy Hydro SouthCare rescue helicopter was called to the scene, but later diverted to a farm accident involving a tractor at South Gundagai.
A man, believed to be aged 76, sustained abdominal and chest injuries after he was run over by the tractor about 3.30pm.
He was airlifted to Canberra in a serious condition.
4pm: ONE person has died in a two-car crash near Coolac.
Emergency services were called to the Muttama Road crash, near Hoares Road, about 3pm. Aspokesman for NSW Police confirmed one driver had died and the other is being conveyed to hospital.
The Snowy Hydro SouthCare rescue helicopter landed at the scene about 3.50pm.
3.30pm: THE Snowy Hydro SouthCare rescue helicopter has been tasked to a serious two-car accident on Muttama Road near Coolac.
Emergency services were called to the accident, about five kilometres from the Hume Highway, shortly after 3pm on Wednesday.
Initial reports suggested the cars have collided head-on and two people are trapped.
It is understood a vehicle is leaking fuel.
The road has been closed in both directions.
