Mrs Jones, who is better known as Isabel or Bel, celebrated her 100th birthday at the William Farrer at the weekend with 110 family members and friends.
She was born in Wagga, married Les Jones and moved to a property in Alfredtown.
The couple have eight children, 22 grandchildren and 19 great grandchildren with three on the way.
One of her grandchildren, Kate Jones, said it was remarkable to watch the family come together to celebrate an incredible woman.
“We don’t see our family a lot but as soon as we are together, there’s an amazing vibrancy,” she said.
Ms Jones described her nan as a generous, honest, strong and caring woman with a love of gardening and animals.
“She is always giving and will tell you how it is,” she said.
Every time you’d go to her house, she’d always give you something.
“She didn’t like to see you leave empty handed.”
The family has a strong multicultural background and Ms Jones said her nan encouraged the family to travel when they could.
Mrs Jones is a resident at the RSL retirement village in Wagga.
