The case of Janelle Maree Rapley was mentioned in Byron Bay Local Court on Thursday.
Rapley, 46, moved to the north coast after leaving the Hampden Bridge Child Care Centre in 2013.
She pleaded guilty by letter in Wagga Local Court on August 14 this year to one count of stealing as a clerk or servant.
The case was then adjourned to Byron Bay for sentencing.
Police allege Rapley stole $60,000 from the childcare centre between January 1 and December 31, 2012.
Rapley, although pleading guilty to the charge, has told police she believes the sum is less.
The childcare centre closed in July, blaming the theft for its inability to continue operating.
In Byron Bay on Thursday, the magistrate ordered a pre-sentence report on Rapley and adjourned sentencing until a date in January.
