While the region is out of lockdown, residents still need to follow the rules, including social distancing at restaurants and wearing masks while shopping.
At the Murrumbidgee Local Health District's press conference on Friday, Riverina Police District Superintendent Bob Noble said officers continued to crack down on rule-breakers.
He said it was a busy weekend after the rules were relaxed on September 11.
"There were some things that were very concerning in that respect, and I have asked our police to be quite intrusive without being over the top in terms of enforcing compliance," Superintendent Noble said.
"There has been something in the order of nearly 600 infringement notices issued in the last four weeks across the Riverina district.
"That includes the last week where the stay at home orders were lifted."

Superintendent Noble said the region was at a "crossroads" with the pandemic and urged residents to remain cautious.
"Irrespective of what the lockdown status of an area might be, people should limit their travel unless it's absolutely necessary," he said.
"Don't leave home unless you need to.
"Yes, the licensed places and restaurants and cafes are open, and we want them to continue making an earning from that, but I want to encourage people to continue to be circumspect about that."
Superintendent Noble warned there could be people moving around the Riverina that are COVID-positive without knowing it, and as such, it was best to remain on alert.
He said their officers would be out and about over the weekend to ensure that licensed premises and patrons abided by the rules.
