Griffith Fire and Rescue NSW crews set to work ensuring surrounding buildings were safe as the fire 'threw embers' and endangered nearby houses.
Captain Danielle McKay said that they'd turned out to Merrigal Street a number of times before.
"It was just after 4:30 this morning, we were called out. We arrived to find the building completely engulfed in flames," she said.
"There was a powerline downed so the energy authority cut the power once we'd established an exclusion zone... we were there on the scene for a while putting it out."

Captain McKay added that the cause is currently unknown and police are investigating.
Griffith police confirmed that the matter was under investigation based on initial evaluation.
"There are a number of lines of inquiry but our initial investigation is based on that evaluation from attending fire crews," Acting Inspector James Whalan said.
"It's currently under investigation by detectives."
This incident comes weeks after a string of property fires across Griffith that sent Fire and Rescue NSW Griffith to five separate structure fires in five days.
