Andy Chen has opened 11 Sushi Hub stores and decided to open his next in Wagga, as being a halfway point between Sydney and Melbourne could be "strategically advantageous".
The store was due to open inside Wagga Marketplace in August but due to the Sydney lockdown it is likely to be delayed to September.
"One of our aims is to support the Wagga community by hiring around a dozen local staff and sourcing our ingredients within the region," he said.

Mr Chen said he is thrilled to open a store in Wagga and looks forward to meeting his new customers.
A spokesperson for Wagga Marketplace Centre Management said the store will be open in the coming months.
"The grand opening has been slightly delayed due to the ongoing COVID-19 situation, but we are working closely with Sushi Hub to bring this exciting new retailer to our community very soon," they said.
"We are looking forward to giving our customers greater choice by expanding our food court offering."
