A late try to Super W player Harriet Elleman ensured Aggies held onto their advantage.
Coach Elliot Barrett was pleased to take the 29-12 win.
"It was excellent," Barrett said.
"Waratahs are a pretty tough team to play and it was in pretty tough conditions on the weekend so it was very impressive to see our girls be able to maintain possession and really dictate the game to play how we wanted to play."
With Waratahs possessing plenty of strike power, Barrett went in with a plan to limit their time with the ball.
He was thrilled with the side's ball control, especially through the forwards.
The women's side are flying the flag for the club this season, with no men's team taking part.
However they've also welcomed a number of new faces from other clubs not taking part in this year's competition.
Amelia Lolotonga and Krystelle de Meyer are among those who have joined the club when premers Griffith elected not to take part while there are a number of Tumut players in the side as well.
Barrett is pleased with how things are coming together.
"It is good to have them come across and play in Ag College colours," he said.
"It's exciting for me to see the inter-club mateship build between all the girls."
Meanwhile CSU continued their winning start to the season with a 45-0 win over Wagga City.
The Boiled Lollies were unbeaten heading into the clash but proved no match for the ladder leaders.
Tess Staines continued her impressive start to Southern Inland, scoring five of the team's seven tries.
She has now scored 13 tries in three games for the club.
Emma Robertson and Ellen McIntyre also crossed in the win.
Meanwhile Leeton brought up their first win of the season with a 17-7 win over newcomers Hay.
Paris Crelley scored all three tries for the Dianas.
Ag College will be looking to extend their unbeaten run when they host Albury at Beres Ellwood Oval on Saturday, Waratahs will be out to get back to winning ways when they host Leeton while Hay are chasing their first ever win up against Wagga City.
