Barbara Pitt celebrated reaching centenarian status on Friday surrounded by her family and friends.
Barb said she grew up on a property between Macksville and Dorrigo, where she developed her love for horses.
She learned to stand up and canter on a horse, a talent she said came naturally.
"I just lived on ponies," she said. "We had a cow pony, as broad as she was long.
"I was a real tomboy and I would hold the squealing pigs while dad marked them and I learned how to make pastry and scones from mum."
Barb said she could never forget how she met her husband and the love of her life, Norman Lindsey Pitt.
"One day I was cleaning the window and I opened the gauze real wide and didn't realise the butcher was delivering the meat," she said.
"I hit him in the forehead and he said, 'Hey, that hurt.'.
"I was a bit cheeky, so I said, 'would you like me to kiss it better?'.
"He said 'yes please' and so I fell in love with the butcher boy."
The pair married when Barb was 22 and Norman left to spend five years in Papa New Guinea as part of the Wewak Campaign in World War Two.
"He wanted a business of his own when he came back," she said.
"That's what he fought for.
"He used to say 'If you have the guts and the money to have a go you could. Not all countries are like that'."
The couple started a butcher's shop and would make the trip to Wagga for the lambs.
Now Barb lives at Riverina Gums Retirement Village, but that doesn't stop her from gardening and having a good boogie.
She has some handy tips for anyone looking to live a long and happy life.
"Eat plenty of vegetables and fruit and don't ever stop dancing," she said.
"Make sure to spend it with the ones you love."
Janelle Barlow, village manager, said the staff love Barb for her feisty nature.
