The five-month trial, in areas away from established venues, had been due to expire on Thursday but will now run to June 11 after Mayor Greg Conkey used his discretionary powers to extend the cut-off to the next council meeting.
Councillors will then be asked to approve a further extension ahead of a final decision on the vans' future.
Badger and Hound Coffee owner Ursula Digregorio was one of the first operators to make use of the trial, setting up her van outside the Kapooka base in early January.
Ms Digregorio thanked Cr Conkey and said she hoped councillors granted another extension "so I can continue to earn an income" and "ensure the trial maintains momentum".
She said the trial should continue as "there is a demand from my loyal customer base to continue offering them the product and service they have received over the past five months".
