The Blacks led Waratahs for most of the clash at Conolly Rugby Complex on Saturday before two late tries proved to be just enough for the premiers to run out 38-31 winners.
Co-coach Angus Stevenson thought their depth played a big part in the win.
Anthony Hill, Tom Hobbs, James Daley, Richie Lamont and Joe Reynolds were inserting into the game and helped change the momentum.
"The reserves who came on were really good," Stevenson said.
"They injected that bit of energy."
Sam Bunny also scored a hat-trick in the win.
Griffith have only won once in the first five rounds, against winless CSU, but Stevenson even went as far to call them the better side.
"We got lucky," he said.
"They were the better team."
Stevenson couldn't have been more impressed with the Blacks, in particular Chris Latu.
Latu led the charge, scoring twice in the visitors' best performance of the season.
"They were really good," Stevenson said.
"I hadn't seen them play this year but I thought they were toughest opposition we've played so far.
"I thought they were phenomenal."
After going through undefeated last season, Waratahs have come back to the pack but made it four straight wins ahead of a clash with the Reddies.
CSU were beaten 76-10 by Albury at Murrayfield.
Sam Allen, Ryan O'Sullivan and Liam Krautz all scored doubles.
