Owner Aidan Adams said he "jumped at the opportunity" as this had been on the cards for a while.

"People know that we make our own bread and cakes as it's always been in our interest to do our own baking," he said.

Melba's Bakehouse and Eatery will become The Borough's separate entity and fill a void in Baylis Street's hospitality sector, according to the owner.

Mr Adams said the current shop's contingent is restricted and this move will allow The Borough to focus on its bread and butter, while breakfast and on-the-go meals can be the focus at the new shop.

"We're looking at our menu at the moment and we'll add a wide variety of treats to the new menu," he said.

"The Borough will remain open for the lunch and dinner trades but breakfast will be pushed down the road at the new location.

"This means we can push our burgers The Borough and also experiment a bit, while not spreading ourselves so far out the board."

Mr Adams said there isn't too much left to do with the fit-outs of the new location and should be opened within the next month.

"The emphasis for us, is a good location where people can enjoy a sit-down meal but also one that accommodates quick, take-away lunches," he said.

"The feedback we've received at The Borough is that there are a lot of offices around us and people need quick, easy, affordable and on-the-go meals.

"There's not a lot left to do, we're still just going through some things and working on draft menus but we're hoping to have a fairly short turn around, opening sometime next month."

The business is still on the lookout for kitchen and baking staff and Mr Adams encouraged those interested to apply.
