The incident took place a couple of hours into the eight-hour flight from the Gold Coast, Airservices Australia says.
The plane was diverted to Sydney, where the man was met by the Australian Federal Police, and paramedics.
The other passengers were transferred to other flights back to Singapore.
No charges have been laid.
