Sheldon Lee Johnson, 30, fronted Wagga Local Court on Wednesday after he was caught red-handed in the pub on July 23.
Documents tendered to the court revealed Johnson was seen on CCTV taking the cash from a staff-only area of the venue after the licensee had retrieved it to pay out a poker machine win.
The licensee left the cash near the Keno counter and momentarily left the room to check on a poker machine.
Police noted that Johnson is “well-recorded in NSW with a total of 22 charges, including assault, resisting police, driving while disqualified, possessing prohibited drugs, fraud, trespass, and aggravated break, enter, and steal”.
Johnson will return to court on December 5 for sentencing.
