Jamie Shepley, executive chef at The Roundabout Restaurant, said the degustation experience is relatively untapped in Wagga.
“It’s a massive thing,” he said.
“It gives people the opportunity to try lots of different things and the portion sizes are smaller so you fit eight courses in.”
One dish in this month’s degustation will be a traditional beef tartae, but in a Japanese style with a dashi mayonnaise and seaweed, Mr Shepley said.
“This time we have gone with a French-inspired theme,” he said.
“This is classic French dishes or techniques with a modern twist.”
