Fine-dining chef Tim Mabey’s ingenious mind has conjured up twelve brand new canapes for this year’s bacon degustation, from smokey to sweet.
“Some courses are scented or infused with bacon and for some it’s the main ingredient,” Mr Mabey said.
“They’re small but after 12, no-one’s ever left hungry.”
Selections include a pork fillet wrapped in bacon with apple and white balsamic. Mr Maybe doesn’t eat much bacon himself, so some lucky colleagues have had a tasty few weeks at work in the lead up.
The deli will also be debuting a top secret new flavour to add to their existing arsenal of eight.
The degustation is now in its fourth year and deli-assistant Kerry Cox has been along for the ride every time.
“It’s just amazing every year and always totally different, Tim’s so clever,” she said.
There are still spots left on the exclusive table for 40, with tickets including trivia and local beer and wine.
