The cafe is the latest addition to The Mill’s suite of ground floor businesses and owner Peter Neil said he wanted to duplicate the ambience, physical appearance and menu of his Petersham restaurant.
The French provincial style eatery will operate throughout the day and Mr Neil hoped it would become a regular haunt for The Mill’s apartment-dwellers as well as other Wagga residents.
“There’ll be a particular emphasis on pastries, coffee and light meals,” Mr Neil said.
“In the early stages we’ll bring things down from Sydney but we hope to quickly morph towards self-sufficiency with our own vegetable garden for that authentic farm to table experience.”
The Pig & Pastry is expected to open mid-April and is the second eatery announced for the iconic development.
Asian-fusion restaurant The Dynasty is expected to open by the end of February.
