James Maher, development manager of The Mill, has released details of what will occupy part of the former wheat mill.
“One of the important things for us was retaining part of it’s industrial history, so there’s going to be a working microbrewery onsite,” Mr Maher said. “There’s still grain coming in, but now it’s going into beer rather than flour.”
The Grainstore will also include a steakhouse, while a French brasserie and an Asian-fusion restaurant will go underneath The Mill Residence.
However, Mr Maher was tight-lipped about what other retailers would set up shop.
There is another space allocated for a “national chain” restaurant and The Mill is seeking expressions of interest.
