FOR two Wagga chefs, bacon isn’t just for breakfast.
As part of the Taste Riverina festival, Jess Sprake and Tim Mabey are creating 14 different dishes – all of which include bacon.
They’re using every kind of bacon from crumbed spec, short cut and panchetta and Wagga’s famous Hampden Bridge Bacon.
So far, they’ve got six dishes including bacon meringues with maple and white chocolate filling.
“We both love what we do, it comes through in what we serve,’ Mr Mabey said.
“We’re creating things people wouldn’t expect, like bacon parmigiana,” Ms Sprake said.
