CSU experimental wine maker Campbell Meeks is spearheading a new batch of festival wines and ciders and hopes to showcase his wares before Christmas.
“We’re pretty excited about the new batch of cider as we’ve never tried making it before,” Meeks said.
“The cider is fermented and sitting in a tank just settling out at the moment, so we just need to filter and carbonate it before bottling.”
Meeks hopes to release the apple cider under the banner of UniCider and says it’ll definitely be on keg for Wagga’s upcoming summer events.
“We’re looking at some new wines as well for next year, possibly a prosecco and a moscato,” he added.
“We’ve also got a hipster little pétillant-naturel (pet-nat) ready to go - there’s plenty of fun stuff going on.”
