Barry Lillywhite and Anton Green, the businessmen behind the project, launched the campaign in Wagga last week and have already been inundated with financial supporters.
In just four days, crowd funding had raised nearly $5000 with many more showing their support for Coolamon Cheese via social media.
Mr Lillywhite said the aim was to raise $40,000 by the end of November to give the project a kick-start.
"The support from the local community has been so incredible over the past three years, that is why we thought we would try crowd funding," Mr Lillywhite said.
"It is a great way for people to be a part of Coolamon Cheese, gain recognition and of course choose a tasty reward."
The launch was held at the Murrumbidgee Turf Club's Eat Local Thursday market last week, with Gardening Australia's Costa Georgiados one of many who attended the event.
Mr Lillywhite said Mr Georgiados was excited by the projected, and endorsed it on his own Facebook page.
Directors hope to have the cheese factory up and running in 12 months' time. The business is expected to create at least 15 jobs.
To continue the momentum, Coolamon Cheese directors are holding a public meeting at the Coolamon Sport and Recreation Club tomorrow. It will start at 7pm.
